Brewing Methods & Extraction¶
Coffee brewing is the process of extracting soluble flavor compounds from roasted coffee beans using water. The fundamental difference between brewing styles—such as espresso and filter coffee—lies in how water interacts with the coffee grounds, which dictates the required grind size, extraction time, and resulting flavor profile.
What is it?¶
Brewing specialty coffee is fundamentally an exercise in chemistry and fluid dynamics. We manipulate variables (temperature, pressure, particle distribution, ratio, and water composition) to extract a precise percentage of the coffee bean's mass (ideally 18-22% extraction yield) into a specific strength of beverage (Total Dissolved Solids, or TDS).
Why Better?¶
Standardizing brewing parameters and understanding the mechanics behind extraction allows for repeatability. By removing the guesswork and treating brewing as a dialed-in system, you can consistently achieve sweet, balanced cups and systematically troubleshoot under- or over-extraction. A rested cup tastes lively, sweet, and clean—not sharp, gassy, or hollow.
When Does it Fit?¶
- Filter Coffee (Pour-over, Drip): Best for highlighting origin character, subtle fruit or floral notes, and vibrant acidity. Often relies on light-to-medium roasts.
- Espresso: Best for intense, concentrated shots with heavy body, syrupy texture, and low acidity. Often relies on medium-to-dark roasts, though modern light-roast espresso is popular in specialty shops.
Use Cases¶
Pour-over / Filter¶
Filter methods (like V60, Kalita Wave, or Chemex) use gravity to gently pull water through a bed of coffee. The paper filter traps oils and insoluble fines, resulting in a cleaner, more delicate cup that showcases the bean's nuanced terroir.
Espresso Extraction¶
Espresso forces hot water (typically 90–93°C) through a tightly packed bed of finely ground coffee at high pressure (around 9 bar). The rapid extraction emulsifies coffee oils, creating crema and a highly concentrated flavor profile.
Bean Preparation & Storage¶
Resting¶
Fresh beans trap roasting gas (CO2). If brewed too soon, the gas acts as a barrier, causing uneven extraction and hollow flavors. - Filter: Rest at least 14 days. Very light roasts often bloom after 3–4 weeks, and ultra-light imports may need up to 8 weeks. - Espresso: Rest about 7–10 days. Darker roasts work sooner.
Freezing & Portioning¶
After resting, protect beans from air, heat, and light. Portioning into single-dose packs (e.g., 15g or 20g) and freezing them preserves freshness indefinitely. Take one pack from the freezer and grind it right away to maintain aroma.
Ecosystem & Connections¶
The brewing ecosystem involves interdependencies between several pieces of equipment: - Grinders: The most critical component. Particle size distribution determines the extraction ceiling. - Water Treatment: Reverse Osmosis (RO) mixed with specific minerals is essential for preventing machine scale and extracting desired flavors. - Brewers & Machines: Modbar, E61 groups, or manual drippers are the vessels for execution.
Compatibility & Requirements¶
- Burr Geometries: Certain burrs are designed for specific methods. SSP Multipurpose (MP) burrs excel in high-clarity filter and light-roast espresso, while SSP High Uniformity (HU) or Weber ULF burrs provide body and texture suited for traditional espresso.
- Water TDS: Espresso machines require a specific water mineral balance to prevent corrosion, whereas filter coffee can use lower TDS water without risking machine damage.

Migration & Lock-in¶
Investing heavily in espresso equipment (machine + espresso-focused grinder) can create "lock-in" for that specific brewing style. Many home baristas migrate from filter setups to espresso, often requiring entirely new grinders to achieve the necessary particle uniformity at fine settings.
